Just in time for your Christmas feast! Add something a little extra special to your holiday menu and try your hand at recreating a classic dessert from Bistro Gentil in Wanaka. Top the friand with your favourite seasonal fruit and serve alongside a scoop of PURE New Zealand Ice Cream
Ingredients:
150g eggs (3)
100g sugar
20g honey (we like to use our own from Tiaki Bees!)
150g ground hazelnuts
125g soft butter
15ml Frangelico (optional)
Method:
Preheat oven to 160ºC
Whisk the eggs, sugar and honey in a mixing bowl
Add the ground hazelnuts and Frangelico. Stir
Add the soft butter and stir until uniform
Pour into a buttered mould and bake for about 40 minutes
Let the friand cool before removing from the mould
